Banana Nut Muffins

Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 egg, beaten
- 1 tsp vanilla extract
- 1 tsp baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
- 3/4 cup chopped walnuts (or pecans)
Instructions
- Preheat your oven to 350°F and line a muffin tin with paper liners or grease it
- In a large bowl, mix the mashed bananas with the melted butter (3 bananas, 1/3 cup butter)
- Stir in the sugar, egg, and vanilla (3/4 cup sugar, 1 egg, 1 tsp vanilla)
- Sprinkle the baking soda and salt over the mixture and mix well (1 tsp baking soda, pinch salt)
- Add the flour and stir until just combined (don't overmix) (1 1/2 cups flour)
- Fold in the nuts (3/4 cup walnuts)
- Spoon the batter into the muffin cups, filling each about 2/3 full
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Let them cool for a few minutes in the pan, then transfer to a wire rack
