Banana Nut Muffins

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • 3/4 cup chopped walnuts (or pecans)

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with paper liners or grease it
  2. In a large bowl, mix the mashed bananas with the melted butter (3 bananas, 1/3 cup butter)
  3. Stir in the sugar, egg, and vanilla (3/4 cup sugar, 1 egg, 1 tsp vanilla)
  4. Sprinkle the baking soda and salt over the mixture and mix well (1 tsp baking soda, pinch salt)
  5. Add the flour and stir until just combined (don't overmix) (1 1/2 cups flour)
  6. Fold in the nuts (3/4 cup walnuts)
  7. Spoon the batter into the muffin cups, filling each about 2/3 full
  8. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let them cool for a few minutes in the pan, then transfer to a wire rack
