Chicken salad sandwich corners

Ingredients

  • 2 lbs chicken salad
  • 12 slices bread
  • Butter, softened

Instructions

  1. Lightly butter one side of each bread slice (12 slices bread)
  2. Spread check salad on the unbuttered side of 6 slices
  3. Top with remaining bread slices, buttered side out
  4. Trim crusts with a sharp knife
  5. Cut each sandwich into 4 triangles
  6. Cover with damp paper towels and plastic wrap until serving
