Collard Greens

Ingredients
- 3lbs fresh collard greens (2 bunches)
- 6 cups chicken broth
- 1/2lb bacon
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 tbsp apple cider vinegar
- 1 tbsp sugar
- 1 tsp red pepper flakes
- Salt
- Pepper
Instructions
- Wash collard greens thoroughly and remove tough stems. Stack leaves, roll them up and slice into 1-in strips
- In a large pot, cook bacon over medium heat until crispy; set aside (1/2lb bacon)
- Add onion to the pot and cook 5 minutes until softened (1 onion)
- Add garlic and cook until fragrant, about 1 min (4 cloves garlic)
- Add collard greens in batches, stirring until wilted
- Add chicken broth, vinegar, sugar, red pepper flakes and bacon (6 cups chicken broth, 2 tbsp vinegar, 1 tbsp sugar, 1 tsp pepper)
- Bring to a boil, then reduce heat to low and simmer covered for 45 minutes until greens are tender
- Season with salt and pepper to taste
