Ham and Cheese Egg Rolls

Ingredients
- 24 Egg roll wrappers
- 3 cups ham, diced (1/4-in cubes)
- 2 cups Gruyere cheese, shredded
- 2 tsp fresh thyme leaves
- 1 large egg
Instructions
- Heat oil to 350°F
- In a large bowl, combine ham, cheese and thyme. Mix well. (3 cups ham, 2 cups cheese, 2 tsp thyme)
- Lay out an egg roll wrapper with one corner pointing toward you (diamond shape). (Egg roll wrapper)
- Place about 2-3 tbsp of filling in the center
- Fold the egg roll and seal the final edge with egg (1 egg)
- Fry in oil for 3-4 minutes until golden brown
- Drain on paper towel and keep warm
- If making ahead, freeze before frying and add 1-2 minutes to cooking time
