Mashed Potatoes

Prep - 10 min, Cook - 30 min, Total - 40 min

Ingredients

  • 5 lbs Yukon Gold potatoes, peeled and cut into chunks
  • 1 cup whole milk, warmed
  • 1/2 cup heavy cream, warmed
  • 1 stick butter, softened
  • 8 oz cream cheese, softened
  • Salt
  • Pepper

Instructions

  1. Place potatoes in a large pot and cover with cold salted water (5 lbs potatoes)
  2. Bring to a boil, then reduce to a simmer and cook 15-20 minutes until fork-tender
  3. Drain potatoes well and return to the pot
  4. Let sit 1-2 minutes to let excess moisture evaporate
  5. Mash potatoes
  6. Add butter and cream cheese, mix until melted and incorporated (1 stick butter, 8oz cream cheese)
  7. Gradually add warm milk and cream, mixing until smooth (1 cup milk, 1/2 cup heavy cream)
  8. Season generously with salt and pepper
