Pumpkin Bread

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1 can (15oz) pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup water

Instructions

  1. Preheat oven to 350°F. Grease and flour a 9x5-in loaf pan
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt and spices (1 3/4 cups flour, 1 1/2 cups sugar, 1 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp cloves, 1/4 tsp ginger)
  3. In another bowl, mix together pumpkin puree, oil, eggs and water until well combined (15oz pumpkin, 1/2 cup oil, 2 eggs, 1/4 cup water)
  4. Pour wet ingredients into dry ingredients and stir just until combined (don't overmix)
  5. Pour batter into prepared pan
  6. Bake for 60-70 min, or until a toothpick inserted into the center comes out clean
  7. Cool in pan for 10 min, then turn out onto a wire rack to cool completely
