Pumpkin Bread

Ingredients
- 1 3/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp ground ginger
- 1 can (15oz) pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1/4 cup water
Instructions
- Preheat oven to 350°F. Grease and flour a 9x5-in loaf pan
- In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt and spices (1 3/4 cups flour, 1 1/2 cups sugar, 1 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp cloves, 1/4 tsp ginger)
- In another bowl, mix together pumpkin puree, oil, eggs and water until well combined (15oz pumpkin, 1/2 cup oil, 2 eggs, 1/4 cup water)
- Pour wet ingredients into dry ingredients and stir just until combined (don't overmix)
- Pour batter into prepared pan
- Bake for 60-70 min, or until a toothpick inserted into the center comes out clean
- Cool in pan for 10 min, then turn out onto a wire rack to cool completely
