Sautéed Green Beans

Ingredients

  • 3lbs fresh green beans, trimmed
  • 1/4 cup olive oil
  • 1/4 cup butter
  • 4 cloves garlic, minced
  • Flaky sea salt
  • Pepper

Instructions

  1. Bring a large pot of salted water to a boil
  2. Add green beans and blanch for 3-4 minutes until just tender-crisp and bright green (3lbs green beans)
  3. Drain and immediately plunge into ice water to stop cooking
  4. Drain well and pat completely dry
  5. Heat olive oil and butter in a large skillet over medium-high heat - use enough oil so the green beans are covered (1/4 cup olive oil, 1/4 cup butter)
  6. Add garlic and cook 30 sec until fragrant (4 cloves garlic)
  7. Add green beans and sauté for 4-5 min, tossing frequently, until heated through and slightly blistered in spots
  8. Transfer to serving platter and immediately finish with a generous sprinkle of sea salt and black pepper
