Spinach Artichoke Dip

Ingredients

  • 10oz frozen chopped spinach, thawed and squeezed dry
  • 14oz can artichoke hearts, drained and chopped
  • 8oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/4 tsp red pepper flakes
  • Salt
  • Pepper
  • 2 French baguettes
  • 1/4 cup olive oil
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 350°F
  2. In a large bowl, mix cream cheese, sour cream and mayonnaise until smooth (8oz cream cheese,1/2 cup sour cream, 1/2 cup mayonnaise)
  3. Add spinach, artichokes, garlic, 1 cup mozzarella, Parmesan, red pepper flakes, salt and pepper. Mix well (10oz spinach, 14oz artichoke, 3 cloves garlic, 1 cup mozzarella, 1/2 cup Parmesan cheese, 1/4 teaspoon red pepper flakes, salt and pepper to taste)
  4. Transfer to an oven-safe baking dish or cast iron skillet
  5. Top with remaining mozzarella (1/2 cup mozzarella cheese)
  6. Bake 25-30 min until bubbly and golden on top
  7. While the dip is baking, slice baguettes into 1/2-in thick rounds (2 baguettes)
  8. Mix olive oil and minced garlic (1/4 cup olive oil, 2 cloves garlic)
  9. Brush both sides of bread with garlic oil and sprinkle with salt
  10. Arrange on baking sheet and bake at 375°F for 8-10 minutes, flipping halfway, until golden and crispy
