Travis' Really Good Soup

Prep - 15 min, Cook - 30 min, Total - 45 min

Ingredients

  • 1/2 lb ground beef
  • 1/2 lb Italian sausage
  • 1 cup carrots, chopped
  • 1 large onion, chopped
  • 3 celery stalks, chopped
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 2 cups baby spinach
  • 14oz sweet corn, drained and rinsed
  • 14.5oz diced tomatoes
  • 2 tbsp tomato paste
  • 15oz lima beans, drained and rinsed
  • 6 cups chicken broth
  • 14 oz beef broth
  • 2 cups pearl couscous
  • Grated parmesan cheese
  • Salt, pepper, red pepper flakes, Italian seasoning to taste

Instructions

  1. In a large stockpot over medium-high heat, heat 1 tbsp olive oil
  2. Add ground beef and Italian sausage, cook until browned
  3. Push meat to the edges of the pot, add onions, carrots, celery, and green onions cooking for about 4 minutes or until vegetables start to soften (1 cup carrots, 1 large onion, 3 celery stalks, 3 green onions)
  4. Add garlic and cook for another minute (3 cloves garlic)
  5. Stir in tomato paste and cook until caramelized, about 1-2 minutes (2 tbsp tomato paste)
  6. Stir in salt, pepper, red pepper flakes, Italian seasoning, diced tomatoes, chicken broth and beef broth and bring to a boil (14.5 oz diced tomatoes, 6 cups chicken broth, 14oz beef broth)
  7. Reduce heat to maintain simmer and add couscous, cooking for 8 minutes (2 cups couscous)
  8. Stir in spinach, lima beans and corn and cook until spinich starts to wilt, about 2 minutes (2 cups spinach, 15oz lima beans, 14oz corn)
  9. Serve soup in bowls topped with parmesan cheese
